'Rules and foundational elements in building a concept for a successful restaurant with examples of international brands', Oscar Cavallera (Milan), a world-renowned expert and consultant with 30 years of experience in the hospitality industry, as well as the food and beverage industry. He began his career as a barman at the Principe di Savoia (Milan), then as a bar manager at the Hotel Gallia (Milan), manager of the catering company of the fashion show Armani (Milan). In 1985, he founded MK Consulting, a company that provides consulting services in the field of marketing solutions in the Food & Beverage industry. Among his clients are Starwood, Sol Melia, Valtur, Starhotels, Martini, Campari, Bacardi, Laurent Perrier, Illy, Lavazza, Barilla, Coca Cola, hotel Metropole (Venice), Venissa wine resort, Ferragamo hotels (Florence) and Altagamma foundation. Also Oscar is a teacher of the New Interior Design, Design of Hotels and Restaurants courses at Politecnico University (Milan) and HoReCa Workshop Architecture & Marketing at the Milano Business School. For the past 5 years he has been teaching Food & Beverage Marketing in Alma (Scuola Internazionale di cucina italiana) and Ca' Foscari VeniceUniversity. As a journalist he writes for "Il Giornale" and "La guida dell'Espresso" and other well-known Italian professional magazines. He is the director of Bar University for Sole 24 Ore. He received a master's degree in bar management at the College of Blackpool (UK), studied hospitality and tourism in Italy and France.
